Описание: Psyche A. Williams-Forson is one of our leading thinkers about food in America. In Eating While Black, she offers her knowledge and experience to illuminate how anti-Black racism operates in the practice and culture of eating. She shows how mass media, nutrition science, economics, and public policy drive entrenched opinions among both Black and non-Black Americans about what is healthful and right to eat. Distorted views of how and what Black people eat are pervasive, bolstering the belief that they must be corrected and regulated. What is at stake is nothing less than whether Americans can learn to embrace nonracist understandings and practices in relation to food.Sustainable culture—what keeps a community alive and thriving—is essential to Black peoples' fight for access and equity, and food is central to this fight. Starkly exposing the rampant shaming and policing around how Black people eat, Williams-Forson contemplates food's role in cultural transmission, belonging, homemaking, and survival. Black people's relationships to food have historically been connected to extreme forms of control and scarcity—as well as to stunning creativity and ingenuity. In advancing dialogue about eating and race, this book urges us to think and talk about food in new ways in order to improve American society on both personal and structural levels.

Описание:
Originally delivered as the Stegner Lecture at the 2020 annual symposium of the Wallace Stegner Center for Land, Resources and the Environment, Jessica Fanzo here explores how, in the context of the broad global trends of population growth, climate crisis, and inequitable food availability, food systems need to be re-oriented to ensure they can produce enough food to nourish the world. This re-orientation includes moving toward on-farm sustainable food production practices, decreasing food loss and waste, addressing poverty by creating jobs and decent livelihoods, and providing safe, affordable, and healthy diets for everyone. At the same time, food systems must decrease the pressure on biodiversity loss, conserve land and water resources, minimize air and water pollution, and lower greenhouse gas emissions. This is a lot to ask of an entrenched system.
Food policy is central to changing systems, and bold policies must be applied to accelerate and incentivize economic, societal, and technological transformations towards a more socially just and sustainable global food system. But policy decisions come with synergies, trade-offs, and sometimes unexpected consequences. In a world of uncertainty, we must seek global solutions to human and planetary health.

Описание: From its designation in 1926 to the rise of the interstates nearly sixty years later, Route 66 was, in John Steinbeck’s words, America’s Mother Road, carrying countless travelers the 2,400 miles between Chicago and Los Angeles. Whoever they were—adventurous motorists or Dustbowl migrants, troops on military transports or passengers on buses, vacationing families or a new breed of tourists—these travelers had to eat. The story of where they stopped and what they found, and of how these roadside offerings changed over time, reveals twentieth-century America on the move, transforming the nation’s cuisine, culture, and landscape along the way. Author T. Lindsay Baker, a glutton for authenticity, drove the historic route—or at least the 85 percent that remains intact—in a four-cylinder 1930 Ford station wagon. Sparing us the dust and bumps, he takes us for a spin along Route 66, stopping to sample the fare at diners, supper clubs, and roadside stands and to describe how such venues came and went—even offering kitchen-tested recipes from historic eateries en route. Start-ups that became such American fast-food icons as McDonald’s, Dairy Queen, Steak ’n Shake, and Taco Bell feature alongside mom-and-pop diners with flocks of chickens out back and sit-down restaurants with heirloom menus. Food-and-drink establishments from speakeasies to drive-ins share the right-of-way with other attractions, accommodations, and challenges, from the Whoopee Auto Coaster in Lyons, Illinois, to the piles of “chat” (mining waste) in the Tri-State District of Missouri, Kansas, and Oklahoma, to the perils of driving old automobiles over the Jericho Gap in the Texas Panhandle or Sitgreaves Pass in western Arizona. Describing options for the wealthy and the not-so-well-heeled, from hotel dining rooms to ice cream stands, Baker also notes the particular travails African Americans faced at every turn, traveling Route 66 across the decades of segregation, legal and illegal. So grab your hat and your wallet (you’ll probably need cash) and come along for an enlightening trip down America’s memory lane—a westward tour through the nation’s heartland and history, with all the trimmings, via Route 66.

Описание: Eating beside Ourselves examines eating as a site of transfer and transformation across bodies and selves. The contributors show that by turning organic substance into food, acts of eating create interconnected food webs organized by relative conditions of edibility through which eaters may in turn become eaten. In case studies ranging from nineteenth- and twentieth-century industrial animal husbandry in the United States, biodynamic winemaking in Aotearoa New Zealand, and reindeer herding in Arctic Norway to the creation of taste sensation in pet food and the entanglement of sugar and diabetes in the Caribbean, the contributors explore how food and eating create thresholds for human and nonhuman relations. These thresholds mediate different conditions and states of being: between living and dying, between the edible and the inedible, and the relationship between living organisms and their surrounding environment. In this way, acts of eating and the process of metabolism partake in the making and unmaking of multispecies ontologies, taxonomies, and ecologies.

Описание: Working across food studies and media studies, Joanne Hollows examines the impact of celebrity chefs on how we think about food and how we cook, shop and eat. Hollows explores how celebrity chefs emerged in both restaurant and media industries, making chefs like Jamie Oliver and Gordon Ramsay into global stars. She also shows how blogs and YouTube enabled the emergence of new types of branded food personalities such as Deliciously Ella and BOSH!
As well as providing a valuable introduction to existing research on celebrity chefs, Hollows uses case studies to analyse how celebrity chefs shape food practices and wider social, political and cultural trends. Hollows explores their impact on ideas about veganism, healthy eating and the Covid-19 pandemic and how their advice is bound up with class, gender and race. She also demonstrates how celebrity chefs such as Jamie Oliver, Hugh Fearnley-Whittingstall, Nadiya Hussain and Jack Monroe have become food activists and campaigners who intervene in contemporary debates about the environment, food poverty and nation.

Описание: After Hurricane Katrina in 2005, many high-profile chefs in New Orleans pledged to help their city rebound from the flooding. Several formed their own charitable organizations, including the John Besh Foundation, to help revitalize the region and its restaurant scene. A year and a half after the disaster when the total number of open restaurants eclipsed the pre-Katrina count, it was embraced as a sign that the city itself had survived, and these chefs arguably became the de facto heroes of the city's recovery. Meanwhile, food justice organizations tried to tap into the city's legendary food culture to fundraise, marketing high-end dining events that centered these celebrity chefs.
Jeanne K. Firth documents the growth of celebrity humanitarianism, viewing the phenomenon through the lens of feminist ethnography to understand how elite philanthropy is raced, classed, and gendered. Firth finds that cultures of sexism in the restaurant industry also infuse chef-led philanthropic initiatives. As she examines this particular flavor of elite, celebrity-based philanthropy, Firth illuminates the troubled relationships between consumerism, food justice movements, and public-private partnerships in development and humanitarian aid.

Описание: Ruby Tandoh`s radical manifesto takes the guilt out of eating and puts the pleasure back in.
Описание: The chapters in this volume concentrate on the mundane and ordinary eating practices of the everyday, showing how these are linked to change in modern society. The contributors present a collection of systematic empirical results from a unique study based on representative samples of four Nordic populations - Denmark, Finland, Norway and Sweden - conducted at two time points, 15 years apart. The results of this unprecedented longitudinal survey leads the contributors to question many commonly held beliefs about the presumed and feared collapse of the traditional eating habits, family meals, and regular meal patterns. As the social organization of eating is in many ways related to developments in other social institutions such as family, education, and work, chapters provide interesting insights into contemporary society, with key topics selected for scrutiny including gender, food types, diet and health, and cooking practices. Additionally, the chapters highlight changes in the gendering of food practices and signs of increasing informality around meals.
