Описание:
This manual is intended for the craft whiskey distiller who aims to make excellent-quality malt whiskey through artisan distillation methods. This manual describes, at the craft level, the process of making whiskey. It gives detailed instructions on how to distill one barrel (53 gallons) of 120-proof malt whiskey. The reader learns about the principles of distillation, types of stills, and the process of distillation. The manual also goes into detail about how-to make head and tails cuts-the elusive operation that a distiller needs to learn in order to create a world class whiskey. Most important is the chapter on mashing and creating a barley wash for fermentation. The all-grain recipes in the manual are adapted from the mashing (brewing) process used by commercial malt whiskey distilleries. Finally, the wash will be distilled using the double-distillation method employed by most of the renowned malt-whiskey producers.

It describes how bourbon and rye whiskey played a role in the most important events in American history, including the voyage of the Mayflower, George Washington's failed and successful political campaigns, the Civil War, pioneers moving west, Prohibition (of course), plus many more into the twenty-first century. It does so with descriptions of historical events but also with amusing anecdotes and humorous quotes from the historical figures themselves. The book carefully aligns five elements:
a narrative about whiskey's role in eight periods of American history
a description and tasting notes on an American whiskey representative of distilled spirits in each period that are still available today

playlists of the popular music during each period
The book gives readers an integrated and entertaining perspective on popular culture in America at different times, revealing how Americans have politicked, drank their native spirits, ate, and sang. It provides an opportunity for readers to be involved in a truly immersive approach to life-long learning . . . and it's fun.

Описание: The craft of making moonshine—an unaged white whiskey, often made and consumed outside legal parameters—nearly went extinct in the late twentieth century as law enforcement cracked down on illicit producers, and cheaper, lawful alcohol became readily available. Yet the twenty-first century has witnessed a resurgence of artisanal distilling, as both connoisseurs and those reconnecting with their heritage have created a vibrant new culture of moonshine. While not limited to Appalachia, moonshine is often entwined with the region in popular understandings. The first interdisciplinary examination of the legal moonshine industry, Modern Moonshine probes the causes and impact of the so-called moonshine revival. What does the moonshine revival tell us about our national culture? How does it shape the image of Appalachia and rural America? Focusing mostly on southern Appalachia, the book’s eleven essays chronicle such popular figures as Popcorn Sutton and explore how and why distillers promote their product as “traditional” and “authentic.” This edited collection draws from scholars across the disciplines of anthropology, history, geography, and sociology to make sense of the legal, social, and historical shifts behind contemporary production and consumption of moonshine, and offers a fresh perspective on an enduring topic of Appalachian myth and reality.

Описание: Have you ever wondered how whiskey came about? It has roots that go a long way into the past, and in this book, the author tells us how the various discoveries came together - first of all to obtain alcohol from wine, but in Ireland, where grapes do not grow, from ale. The monks who first carried out this experiment wanted alcohol for medical purposes because the monks in those days were also the physicians. Inevitably, the alcohol was tasted, and though at that time it must have been harsh in flavour, the feeling of well-being and warmth it created could not be missed. At first, it was flavoured with spices, notably saffron, which gave it a beautiful yellow/orange colour. Later it was discovered that storage in an oak cask not only produced the amber colour of whiskey today but did wonderful things to the taste. From then onwards, all additions other than water to adjust the alcoholic strength and some caramel to standardise colouring were prohibited by law. Whiskey distilleries were recognised by their chimneys indicating their voracious use of fossil fuels, but today distilleries are being converted to be 100% fossil-fuel-free and still produce the same beautiful amber liquid.
